Chicken Pot Pie


Pie Crust: (or use pre made pie crust)
1 1/2 cups all purpose flour
1 teaspoon salt
5 tablespoons chilled butter, cut into small pieces
2 large eggs
2-3 tablespoons ice water


Filling:
2 tablespoons butter
1 large onion, finely chopped (i use onion powder)
1 teaspoon dried thyme
1 1/2 cups whipping cream
1/2 cup chicken broth
2 tablespoons all purpose flour
2 tablespoon cornstarch
1 1/2 tablespoon paprika

salt, pepper, garlic & etc etc
1 can corn
1 cup potatoes (bite sized pieces & boiled)
1lb chicken (cut up in cooked)


For filling:
In a large skillet melt butter over medium heat. Add chopped onions and thyme, sauté 5 minutes. Whisk together cream, broth, flour, cornstarch and paprika. Whisk into onion mixture. Add corn, potatoes and chicken to sauce. Mix well, pour into 9 inch baking dish.

Pre heat oven to 400
On floured surface roll out piecrust into 12 inch round.
Place on top of filling. Trim edges of piecrust.
Flute the edges and cut a hole in center. (i made a little chicken decoration & put about 4 slits over the top)
Lightly brush with beaten egg.
Bake until filling is bubbly and crust is brown, about 25 to 30 minutes.

Taco Salad

we LOVE taco salad!


YOU NEED:
1lb ground beef
1 package taco seasoning
1 tomato- de-seeded & chopped
1 bag shredded lettuce
2 cups shredded cheese
3/4 cup sour cream (i eyeball it)
tortilla chips


brown the beef & drain- add the taco seasonings per the package directions. after this has cooked, place the meat in the fridge to cool slightly.
while the meat is cooling spread the sour cream over the bottom of an 8x8 dish. then layer the rest in this order:
-beef
-cheese
-lettuce
-tomatoes

dish out into bowls & serve with tortilla chips- SO GOOD!!!
(this is intended to be eaten cold- there is no need to heat up! sounds good to me!)

Oatmeal Maple Muffins


i needed to use this can of Canadian Maple Syrup that a client gave to my husband...so maple muffins it was!

Preheat oven to 350 degrees and grease 8 muffin cups (i tripled this recipe)
Blend together:
1/4 cup melted butter
1/3 cup brown sugar
1 tsp. sea salt


Add dry ingredients and blend until crumbly:
1 1/4 cup all-purpose flour
2 tsp. baking powder


Add and stir together:
3/4 cups rolled oats


Mix together well and stir in to dry ingredients just until moistened:
1/2 cup milk
1/2 cup pure maple syrup


Bake for 20 minutes. Remove from muffin tins. Cool and spread with glaze.
Glaze:
1 tbsp. soft butter
1/2 cup sifted icing sugar
1 tbsp. pure maple syrup
1 tbsp. milk
Mix together until smooth

Sweet & Sour Chicken


You Need:
1 lb chicken breast (cut into bite sized pieces)
1 jar of sweet & sour sauce (easier)
EVVO
1 tblsp vinegar
1 green pepper
1/2 cup pineapple chunks
salt, pepper red pepper flakes to taste

brown the chicken in a large pan (using the EVVO)- when the chicken is almost done, toss in the peppers. add the sauce & other ingredients. simmer for about 10-15 min (adding water if the sauce is too thick)
Server over white rice- Enjoy!

We ate this with Foccacia Bread- omg yum!

White Pizza


Pizza Blanca Sauce (White Pizza Sauce)
2 tbs. margarine or butter
3 tbs. flour
1 cup milk
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. garlic powder
1/2 cup parmesan cheese or shredded havarti
Heat margarine and stir in flour. Mix up to slightly cook flour. Slowlywhisk in milk, adding gradually to make a sauce. Stir in spices and cheese.




Spread pizza dough with white cheese sauce then sprinkle with about 3/4 cup shredded mozzerella. i also added 2 fresh mozzerella balls (sliced) and several dollops of ricotta cheese.

bake according to the pizza crust directions & enjoy!
